  • 1 ox-tongue, salted and if possible smoked, of about 3 lbs (Sainsbury’s have these often)
  • 3 carrots

Method

Soak the tongue for 24 hours changing the water once or twice. Put it in a large casserole with the sliced vegetables, add the pig’s foot and enough water to cover. Throw in the peppercorns and the bunch of herbs, bring gently to the boil and simmer in the oven in a covered casserole at Reg 2/300° for 3½-4½ hours.
