Method

Brown the pieces of chicken in oil and butter or chicken fat, in a flameproof casserole, remove them to a dish and fry the onions in the same fat. Stir in the paprika, let it cook for a minute, then return the chicken, season and cover very tightly with foil and the pan lid. Leave to simmer very slowly or put in a low oven, Reg 2½/315°; for 1-1½ hours, depending on the age of the chicken. When
