Soak the beans for about 5-6 hours. Put them in a pan and cover well with cold water, put in the peeled onion and the cloves of garlic. Bring slowly to the boil, skim and simmer for about ¾ hour. Add salt and simmer on for a quarter of an hour or so. When tender but not mushy, drain and cool. Cook the French beans, broken in pieces if they are too long, in boiling salted water for 10-15 minutes
