Boil together in a wide shallow pan the oil, water, lemon juice, coriander seeds, seasoning and a large bunch of herbs, for ten minutes. Clean the mushrooms, and if they are small add them whole to the liquid, if large, quarter them first. They must be closed and round; open ones absorb too much liquid, and exude too much so they end up sloppy. Simmer the mushrooms slowly for ten minutes, stirr
