Peel the swede, removing all the fibrous pieces. Cut into one-inch cubes, cover with cold water, add salt and cook 20-25 minutes. Drain the swede, mash carefully, add pepper, a little more salt if necessary, a sprinkling of sugar, the butter and, if you like, a squeeze of orange juice. Heat through and serve. Children seem to like this as much as carrots.
