  • 1 lb firm, under- rather than over-ripe tomatoes

You need not bother to peel them, but if you want a very delicate salad dip the tomatoes in boiling water as briefly as possible and skin them quickly. Slice them thinly across and lay the slices on a plate. Sprinkle lightly with salt. Treat the onions, also thinly sliced, in the same way.
