  • ½ pint milk
  • 1 onion, peeled
  • 5 cloves

Method

Stick the cloves into the onion and put it in a small saucepan with the milk and blades of mace. Stand this on an asbestos mat over a very low heat, and let it infuse for up to one hour without boiling. Remove the onion and mace. Cut the crusts off the bread and crumble it into the milk, whisking with a fork. Season with salt, pepper and nutmeg, and if you like add the finely chopped onion with
