  • 12 freshly made very thin pancakes
  • 8 oz cream cheese
  • 1 eg

Method

Put the cream cheese, beaten egg yolk and sugar in a bowl and beat together with a fork. Add the raisins and nuts and stir them in. Put a large dollop of the mixture in a strip in the middle of each pancake, and fold it over as if you were wrapping a parcel.

Heat the butter in the frying pan, drop in the little parcels, brown them all over and serve hot, sprinkled with caster sugar. You
