  • 1 lb preserving sugar to 1 pint juice
  • water

Method

Put the fruit in a large china or earthenware basin with about ½ pint water to 3 lbs fruit and mash it down a bit with a wooden spoon or steak-beater. Stand the bowl, covered with a large lid, in a pan of water and put it in a slowish oven Reg 1/275° for one to two hours, mashing from time to time.
