Grey mullet, though readily caught off the British coasts, tends to be scorned in our kitchens. While not having the unusual flavour of its red cousin, it is a perfectly acceptable fish to eat and just needs a little titivation. You will delight your husband if he fishes, for this is a much-caught fish. Serve this with an interesting non-lettuce salad, something like chicory or any of its relatives. You can also use sea bass for this recipe, if you can get one that’s large enough.
