This is a recipe that for a number of years I have used simply to make a pork and egg pie, but with shortcrust pastry rather than hot-water dough. When I was mulling over one-pot ideas it struck me that I could replace some of the eggs with leeks or some other vegetable and turn this into a perfect one-pot dish because its made in a roll.
