This is the simplest of dishes. If we have a lot of friends and family to feed, I know this will be a winner. I do one version with rum, and one without for the children, though it has to be said that children will happily wolf down the grown-ups’ version. In fact, the alcohol will be driven off in the cooking, just leaving behind the flavour, so you needn’t worry. It’s just that I’m too mean to splash out on rum for children!
