Method

  1. Prepare Soup Stock.
  2. Peel plantains, cut into 1-inch slices, and soak in salted water for 15 minutes.
  3. Drain plantains and deep-fry in lard or vegetable oil for 15 minutes at a temperature of 350°F. Remove plantain slices from fat, mash in a mortar, and add to Soup Stock.
  4. Cook over moderate heat for 10 minutes
