There’s a wide variety of sherries out there, ranging from pale, dry fino sherries to the king of sherries, dark caramel Pedro Ximénez. Once derided as something for only gray-haired ladies to drink, sherry (and lots of other fortified aperitifs and digestifs) have, thankfully, come back into fashion.
