I like the heady (not spicy) flavor of Marash or Aleppo pepper over these toasts, but those peppers are sometimes hard to find, so I often substitute smoked paprika. It is a bit spicier but still works. Similarly, you could substitute mashed avocado for the ricotta if you’re avoiding dairy.
In a small bowl, combine the ricotta, lemon zest and juice, a glug of olive oil, and a pinch of salt.
Brush the cut side of the peaches lightly with neutral oil, then sprinkle with the pepper flakes or paprika.
