David Lebovitz introduced me to plum flaugnarde, a traditional French dessert that walks the line between custard and cake. Sandra Holl of Floriole Cafe and Bakery in Chicago opened my eyes to the idea that clafoutis could be made with more than just the traditional cherry. This dish is the happy marriage of those two inspirations.
