Caramelised Walnuts

We use these in the Stichelton custard tart, where we grate the walnuts in order to disperse their flavour as much as possible. But broken into small pieces they add flavour and texture to a host of savoury and sweet dishes, which will benefit from that extra crunch. Will has a particular soft spot for these, as do many of the kitchen team. We’d advise hiding them from
