This is probably the best way to use up old Christmas pudding!
Mix the ice cream base with the Christmas pudding chunks and salt until evenly combined. Churn in your ice cream maker according to the manufacturer’s instructions, and transfer to a freezer-proof container. This will keep in the freezer for up to 3 months. If you can, keep your freezer at -14°C for the perfect silky texture.
