This dessert was inspired by the bellini cocktail, first created at Harry’s Bar in Venice. I have made a two-part dessert: one part being a white peach granita and fool, the other being a bellini frappé. The bellini frappé can also be served as a lovely cocktail or at a Christmas party. The dessert component could also be served with white peach ice cream on its own.
