One of Thailand’s signature dishes, panaeng neua is extraordinary: flat-out delicious, and easier, much easier, than pie. With jasmine rice and a great big green salad, this makes a memorable meal. To grind peanuts for this recipe, use your spice grinder, pulsing on and off to grind evenly, or mince them well with your big knife. Natural-food stores often have grind-it-yourself peanut butter contraptions, but take heart: school lunch peanut butter will also work. The classic presentation fo
