Ingredients: 2 limes, halved; handful of roasted peanuts, chopped; 1 fresh red chilli, seeded and finely sliced; 2–3 spring onions/scallions, green parts only, finely chopped; freshly ground black pepper; juice of 1 lime; large handful of fresh coriander/cilantro leaves; large handful of fresh beansprouts; drizzle of sesame oil; 10 ml/2 tsp Thai red curry paste; 10 ml/2 tsp fish sauce; 15–30ml/1–2 tbsp red miso; 400 g/14 oz pork fillet/tenderloin; 1.75 litres/3 pints/7½ cups chicken or pork stock; 30 ml/2 tbsp dark soy sauce; 400 g/14 oz fresh ramen noodles; 15 ml/1 tbsp dark soy sauce; pinch of salt; 15 ml/1 tbsp mirin; 15 ml/1 tbsp smooth peanut butter

This is a fusion of cuisines and is full of gutsy flavours. Chicken stock is used as the broth but you can switch to a heavier pork one if you prefer. The pork is tender and lean and tastes wonderful paired with fresh beansprouts and a zing of lime.

Method

Preheat the oven to 190°C/375ºF/Gas 5.
To prepare the Thai pork, mix all the ingredients together except the sesame oil. Smother the mixture all over the pork to cover, then heat the sesame oil in a frying pan, add the pork and sear it on both sides un
