Plan ahead and salt your own cod for this delicious beer battered fish dish. Serve with lemon wedges, our lemon mayonnaise and a sprinkling of Green Herb Garnish…not forgetting a side of chips…

Ingredients

  • 1 kg cod, boneless, cut into 200g portions
  • 300 g white sugar

Method

  • To salt the cod, mix the sugar and salt together then sprinkle enough to cover the base of a lidded container. Arrange a single layer of fillets skin side up, cover with more sugar and salt and continue layering until all the cod is covered.
  • Cover and refrigerate for 48 hours. Remove and soak the cured cod in 4
