Known as galadoboureko, this Cypriot-style custard tart is the first proper pudding I tasted as a young child, so it’s little wonder I have a sweet tooth.

  • 500 g caster sugar

  • First make the syrup: Place the sugar, lemon juice and the cinnamon bark into a pan. Pour in 500 ml water, stir and bring to the boil, then leave to gently bubble steadily for 10 minutes. Cool.
