Why are pancakes in the “cakes” chapter? Well, even though they may seem to you like a breakfast food, in Ireland they’re a dessert. We don’t eat stacks of American pancakes with maple syrup (much as I like them now). Instead, our pancakes are very thin, crepes really, and we eat them sprinkled with lemon juice and sugar and rolled, particularly on “Pancake Tuesday,” as we call Mardi Gras.
