Machetto is yet another Ligurian sauce of humble origin that winds up exalting whatever it touches because of the immediacy of its flavor. Machetto gives its special taste to breads and savory pies from the Ponente, including sardenaira and machetusa. Many Ligurians stir some machetto into fresh lemon juice before combining it with olive oil to produce a bracing salad dressing.
