Throughout Liguria, but especially in the Ponente, flowers are used to flavor foods and recipes. A good basic application of flowers is in honey, which you may use in baking or in any other way that you might normally eat it. This recipe uses roses, the following one uses violets.

Ingredients

  • 1 cup/100 g rose petals
  • 2 cups/450 ml

Method

Set a small pot of cold water to boil. When it reaches a boil, add the rose petals and boil for 3 to 4 minutes. Then separate the petals from the rosewater, using a slotted spoon. Place the petals on a cheesecloth and fold in such a way that all of the petals are enclosed. Then carefully press the cloth for several minutes in such a way that a rose liquid is yielded.
