The custard recipe above can also be used to create rich coffee sauce which tastes good with the Cappuccino Mousse or a home-made Vanilla Ice-cream.
Method
Just replace the vanilla pod with 2teaspoons of fresh, ground coffee, and bring to the boil with the milk and cream. Cook as above, and when ready, pour through a sieve to remove any coarse granules. The sauce will have taken on a light coffee colour with very fine granules left in.
