  • Dried split peas 200 g
  • French shallots 2
  • Carrot 1

Method

  1. Soak the split peas for 12 hours.
  2. Sauté the sliced shallots in some olive oil and add the ham hock. Cover with the split peas and add twice their volume in water. Cut the carrot into small cubes and add them to the preparation with the bay leaf and thyme.
  3. Allow to cook for 45 minutes, adding water if necessary (depending on the desired consistency).</
