Using quinoa is a great alternative to bread crumbs. Red and white quinoa both work very well.

Ingredients

  • cup (70 g) quinoa
  • 1 cup fresh dill, finely chopped

Method

Preheat oven to 180°C.

Cook the quinoa.

In a bowl, combine half of the fresh herbs with the quinoa, lemon zest, juice and capers.

Lightly grease an oven tray. Place the salmon skin side down and sprinkle with salt flakes
