This is fantastic in winter when the choice of seasonal fruit is comparatively low.

Serve the compote with muesli or gingerbread.

Experiment and select your favourite dried fruit. It stores well in the fridge, so you may want to double up the recipe.

Ingredients

  • 2 cups dried fruitprunes, figs, and apricots work well
  • 3 cups (750

Method

Place the dried fruit in a saucepan. Add the water, orange juice and zest, cinnamon stick and star anise.

Cook on a medium heat and simmer until the water is nearly absorbed, approximately 10-15 minutes.

It’s really tasty with 1 whole pear, thinly sliced, or 1 cup of frozen berries added near the end of cooking time.
