Red Bean Patties

Name: Red Bean Patties
Yield: Serves 6-8
Ingredients: 1 cup (200g) cannellini beans, soaked overnight; 1 tsp freshly ground black pepper; vegetable oil for frying; 1 handful of spinach leaves, blanched (optional for serving); 1 tsp salt; ½ cup (100g) kidney beans, soaked overnight; ¼ cup spicy tomato relish or tomato sauce.; 1 tsp ground cardamom; ¼ tsp ground cloves; 1 tbsp coriander seeds, toasted; 1 tbsp olive oil; 3 cm piece fresh ginger, peeled and grated; 3 cloves garlic, peeled and finely sliced; 150 g fresh spinach leaves; ½ onion, peeled, finely diced; 1 tbsp cumin seeds, toasted; 1 tbsp balsamic vinegar; 1 cup fresh coriander leaves, roughly chopped; ½ cup fresh italian parsley, roughly chopped; 1 egg, lightly beaten; 1 cup (100g) dried bread crumbs + extra for crumbing

They taste even better accompanied by the spicy tomato relish, and are great served with “Cole” slaw from the Slaw Floor.
