Ingredients

  • 1 kg floury potatoes, peeled and cut into large pieces – Agria work well
  • 60 g butter
  • ¾

Method

In a large saucepan cover the potatoes with water. Cover the pan and bring to the boil. After 15-20 minutes check if the potatoes are cooked by spearing with a fork.

Drain well and mash with a good old fashioned masher. Add the butter, cream, salt and pepper and stir to combine. Add more liquid if required for a creamy consistency. Finally stir in the spring onions.
