In a large frying pan over a high heat melt the butter and oil – be careful not to brown the butter. Add the caraway seeds. Stir for 10-15 seconds.
Add the cabbage and boiling water.
Cook for approximately 4 minutes, depending on how crunchy you would like the cabbage, stirring occasionally. Season with salt and lots of freshly ground black pepper. Strain off any excess liquid b
