  • 500g brussels sprouts, outer leaves removed, stalks trimmed, cut in half lengthways
  • 2 tbsp olive oil
  • 10

Method

In a large saucepan, bring some salted water to the boil. Add the brussels and cook for 4-5 minutes. Drain and refresh under cold running water, then set aside.

In a large frying pan over a high heat, fry the bacon in the olive oil until crispy. Add the brussels, lemon zest, salt and pepper. Stir to combine.

Heat through for a minute and serve.
