This recipe really is a triple umami feast, including the fifth taste element in three different food sources: tomatoes, seaweed and dashi. The tomatoes in this recipe are mixed heritage tomatoes, but could be any perfectly ripe tomato; if growing your own, this recipe would be even more perfect. The dressing uses liquid kombu dashi, but would also work with a homemade dashi, although the dish would no longer be vegetarian.
