Steps 1 and 2.

Step 3. Add Béchamel Sauce and simmer for 10 minutes. Press through a fine sieve or blend in an electric blender. Return purée to a clean saucepan. Stir over a high heat until boiling; add cream and finely chopped chervil or parsley, and serve with croûtons.
