Ingredients

  • 1 celery root
  • salted water
  • ½ pint well-flavoured mayonnaise

Method

Trim and wash celery root. Cut into matchstick-sized strips and blanch until tender in boiling salted water. Drain; cool and dry. Dress with mayonnaise seasoned to taste with freshly ground black pepper and mustard, curry powder or paprika.
