Drop diced cucumber into boiling salted water and boil for 3 minutes. Drain well and dry with a clean towel.
Melt butter, and sauté diced cucumber and ham for 5 minutes, stirring constantly. Add finely chopped parsley, chives or chervil, or a combination of all three, and salt and freshly ground black pepper, to taste.
Combine the mixture with well-beaten eggs and make omelette
