  • 1 tender young goose
  • 2 Spanish onions, sliced
  • 4 large carrots, sliced


Place cleaned and singed goose in water in a large thick-bottomed saucepan and bring to a boil. Remove from surface of boiling water; add sliced onions and carrots, bouquet garni, peppercorns and salt, to taste. Skim again; reduce heat and simmer goose gently until tender.
