    • 1 large cooked beetroot
    • 1 teaspoon grated orange rind
    • ¼ pint


    Peel and dice beetroot. Heat orange rind with orange and lemon juice. Mix sugar and cornflour, and stir into hot liquid. Cook, stirring constantly, until thickened. Add diced beetroot and butter; season to taste with salt, and heat through.
