Sautéed new Potatoes with Herbs


  • 2 pounds small new potatoes
  • 4 tablespoons olive oil
  • 1 tablespoon each finely chopped parsley, chervil and chives
  • 4 shallots, finely chopped
  • 1 clove garlic, finely chopped
  • salt and freshly ground black pepper
  • lemon juice


Peel small potatoes and cook whole in a frying pan with olive oil, and finely chopped herbs, shallots and garlic. Season potatoes to taste with salt, freshly ground black pepper and lemon juice, and sauté until cooked through and golden. Serve immediately.
