    Method

    Rub ripe strawberries through a hair sieve. Combine fruit purée, syrup, strained lemon juice, and enough red food colouring to make a pink ice. When quite cold, freeze in the usual way. Whisk egg whites until stiff and stir into the mixture when it is half frozen. Then continue the freezing until the ice is sufficiently stiff for serving.
