Praline is a paste of almonds or hazelnuts, or a mixture of both, and caramelised sugar. You can also use walnuts or pecan nuts. Buy the freshest nuts you can get your hands on; old nuts can taste rancid and bitter because the oils oxidise very quickly. This praline adds a beautiful crunch to Donna Tella da Kids and Hazelnut Praline Rochers.
