A healthy way to start the day, this low GI (glycaemic index) recipe releases energy slowly into the bloodstream and is full of protein, vitamins, essential fatty acids and fibre. Enjoy it with plain yoghurt and fresh or poached fruit. I like to add green barley grass powder to mine. It’s an acquired taste, but definitely sits in the ‘super food’ category. The cocoa nibs give the granola a lovely crunch and a delicate chocolate flavour.
