Crispy on the outside and tender on the inside, tostones (fried plantains) are the perfect blend of savory and sweet, making them a versatile addition to any meal. These twice-fried delights are bursting with flavor, thanks to a blend of Jamaican jerk spices that add a unique depth and heat to this cherished dish.

Ingredients

  • Neutral oil, for deep-frying
  • 2 green (unripe) plantains, peeled and each cut crosswise into 4 equal logs
  • Jamaican Jerk Seasoning, for sprinkling

Method

Pour oil to a depth of 4 inches into a deep fryer or deep, heavy pot and heat to 300°F. Line a large sheet pan with paper towels and set it near the stove.

When the oil is ready, working in two batches to avoid crowding, carefully drop the plantain pieces into the hot oil and blanch for 3 minut
