Black vinegar is a lovely aged sweet and mildly spiced vinegar from China, easily sourced from a Chinese food shop. It has lovely smoky notes along with, often, hints of orange. You can replace it with a good aged balsamic vinegar instead. Use it to dress sliced tomatoes with mozzarella and basil leaves, to drizzle over any poached chicken or pork salad, or toss it with green and yellow beans and sesame seeds. It will keep in the fridge for 5 days.
