Wrapped in a hot tortilla with some grated cheese, given a few hard splashes of Smoked Chili Salsa, these eggs make a fast and zesty meal. The safflower stamens, sometimes erroneously sold as saffron, can usually be found in the Mexican section of supermarkets. They give a nice color to the eggs, but if you can’t find them, just leave them out.
