Scotch pancakes – or drop scones, as they are sometimes known – are very similar to American pancakes. I am sure there must be a connection there. I make these at home with the kids; they just love all the mixing and mess, and then to drop the mix onto a hot pan and watch them rise is almost like magic.

Ingredients

  • 225 g (8 oz) self-raising flour
  • Pinch salt

Method

  1. Sift the flour, salt and sugar together in a bowl.
  2. Beat the eggs and milk, making sure you have made up the amount to 300ml (1¼ cups).
  3. Slowly add the flour to the eggs and milk, whisking as you go until you have a smooth, creamy batter. Most recipes state that you should add the liquid to the flour, but I feel it’s much easier and less lumpy to do it
