Method

These are made with ‘scadded’ (scalded) milk.

Put a pint of milk into a saucepan, bring to the boil, stir in an approximately equal measure of salted flour, and continue stirring till the mass comes away from the sides of the pan, like choux paste, and you have a nice pliable dough. Form into r
