In India, fresh banana and turmeric leaves are traditionally used to wrap fish and shrimp before they’re cooked on hot grills. This technique, which actually steams the fish, imbues it with flavor and makes for a dramatic presentation. Since it’s hard to find fresh banana and turmeric leaves in America (try Asian markets), I use brined grape leaves here instead. Serve these little parcels with rice pilaf or Naan
